Many of Hyatt's high-end properties fall under category 7, so they require 30,000 points per night. I've had my eye on Ventana Big Sur which is a Category 7 property but the cash prices are generally upwards of $1000 per night.

As you can see from the photos above, the cash price for two nights is about $2450 while the price to purchase the 60,000 points is about $1,110 so this is a very clear cut example of how you can use points to stay at the property for a much cheaper price. Your redemption value per point goes up significantly when the price of the desired hotel is very high.
